I told you, I love apples



So, I promise this is going to be my last apple specific market post... I just can't help but share all the fabulous things that you can do with apples!

The market can provide you with three of the most important ingredients in the following recipe: apples, eggs, and flour

Apples: Tony Fetters Fruit Farm can provide you with a wide range of apple selections, and if you are nice he will even let you sample them to find the perfect apple for your usage

Eggs: There is always at least one vendor selling eggs, with the possibility of three different vendors each week: Sunnyside Farm, Liberty Delights, and Ferguson Family Farm

Flour: Sunnyside Farm is generously providing our market customers with delicious Yeehaw Farm flour. This is one of a kind wheat flour, that has been grown on the family farm for more then 60 years without the aid of chemicals, not even approved for organic application types, at anytime! This whole wheat flour will give you a whole new perspective on flour.


Delicious Apple Muffins
Recipe adapted from Deborah Madison's: Vegetarian Cooking for Everyone

2 1/2 Cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 - 3/4 Cup packed light brown sugar
2 eggs, lightly beaten
1 1/3 Cup buttermilk
1/3 Cup canola oil or melted butter
1 1/2 teaspoons vanilla extract

Preheat oven to 375 degrees
Grease muffin tins

Mix dry ingredients in one bowl
Mix wet ingredients in another bowl
Mix the two bowls together - but don't beat the batter

Stir into batter
1 Cup apples, diced
1 teaspoon lemon or orange zest
Raisins and Walnuts are other fun options to add to these muffins

Spoon into muffin pans and bake until well risen and slightly brown, approximately 25min.
Enjoy, perhaps with some scrambled eggs...
