To market, to market to buy...


... a fat pig?
Maybe not.

But there are lots of other wonderful things to purchase each week at the Tuesday Market.

This week, perhaps you will venture to think ahead to those cooler fall and winter days when all you want is a nice sun ripened tomato, which of course is long gone from markets at that point. BUT, alas, you can savor your favorite summer tomatoes in the cooler weather by making tomato sauce with them now!

All the the ingredients for you to make a simple tomato sauce can conveniently be found at none other, but the farmers market.

What you need:

Tomatoes, lets say 5-7lbs, skinned and chopped - Whole tomatoes available at Hamilton Heirlooms, Twin Compass, Tony Fetters Fruit Farm, and Zahradka Family Farm. (My suggestion: buy a few from each, that way you can concoct a nice flavorful mixture of tomatoes.)

One onion minced - found at either Twin Compass or Zahradka Family Farm

A few cloves of garlic (depending on how much you love it) finely chopped - found at Twin Compass

Olive Oil (about 1-2 Tablespoons) - found at Hamilton Heirlooms

A bunch of basil finely chopped - you can take home a whole plant from God Scent Herbs

Salt and Pepper - Hopefully found in your kitchen

Chopped tomatoes poured on top of the sizzling onions and garlic



Now that you have all your market goodies...

1. Warm up the Olive Oil in a large pot.
2. Once warmed, add in garlic and onions. Stir until lightly browned.
3. Pour in chopped tomatoes. Cook down until desired thickness of sauce is reached.
4. Stir in basil, and season with salt and pepper to taste.
5. Let cool and freeze for enjoyment all winter long!
